To make Sylvestris, we took Lactobacillus-fermented wort and racked it directly onto second-use, whole Pinot Noir cluster grapes to give it a light, rosé color and a lush grape flavor. In traditional Gose fashion, we’ve added coriander and Mediterranean sea salt for a finish that’s truly a party in your mouth. Permission to sparkle granted!
