Ribes Rubrum is made from black currants from a singular farm in southern Denmark. These blackcurrants, known for their high acidity, are brought in, stomped and chaptalized. After fermentation the resulting wine is then transferred to red wine barrels where is it left to rest for approximately two years. High in acid, full of blackcurrant character and pleasantly smooth this is a perfect foil for chocolate desserts or a cheese plate.
